Polignano a Mare is built on the edge: the houses stop where the cliff stops, and underneath them the sea works its way into caves. Lama Monachile — the pebble cove below the old bridge on the Via Traiana — is the frame everyone comes for, and it works at sunrise, when the water is still and the beach is empty; at midday in July there is nowhere left to stand. The Lungomare Domenico Modugno and the terraces above the cove give you the drop and the horizon without the crowd, and the whitewashed lanes behind the Arco Marchesale stay quiet all day. Monopoli, ten minutes north, adds a working harbour of blue wooden boats and a calmer old town; Ostuni, half an hour inland, is the white city on its hill, best photographed from the olive groves below at the end of the day. Further down the coast in Salento, the Grotta della Poesia at Roca Vecchia is a natural limestone pool open to the sea — access is seasonal and has been restricted in recent years, so check before you build a session around it. May, June and September are the good months: long light, water already blue, and a town you can still walk through.

The boats are working property — keep off them unless the owner offers. Parking near the harbour is limited in summer; leave the car outside the walls.
