Photoshoots in Ostuni start from €460, depending on the length and the number of edited photos. The old town is small enough that an hour covers the cathedral, the stepped lanes and a viewpoint over the plain; a second hour is what you need if you also want the valley villages or an olive grove.

The whole white town seen from the olive plain on the road up past the Madonna della Nova; the cathedral square with its carved rose window and the arched lanes climbing to it; the whitewashed alleys and outdoor stairways of Cisternino; the ring of steep-gabled houses at Locorotondo; and any masseria track through the old olive groves between town and the sea.

The first hour after sunrise and the last hour before it sets. Whitewashed walls throw a lot of light back, so midday is flat and contrasty at the same time and nobody looks their best in it; low sun turns the lime warm and puts long shadows down the stepped lanes. May, June, September and October are the comfortable months, and August is hot enough that early morning is the only sensible slot.

The masserie are working farms or private hotels and the groves around them belong to somebody, even where no gate says so; the centuries-old trees in particular sit on land that is farmed. If you are staying at a masseria, ask the owner when you book, and check whether the harvest is on in October and November, when the tracks are busy with machinery.
